Sausage and Barley Soup

  • 350 grams sausages and cold cuts, diced
  • 100 grams rinsed barley
  • 1 onion
  • 1 carrot
  • 1 parsley root
  • 1 potato
  • 3 celery stalks
  • 1 red bel pepper
  • 2 teaspoons cumin
  • 1 teaspoons smoked paprika
  • 0.5 teaspoons thyme
  • 2 teaspoons salt
  • 0.5 hot green pepper

Heat some oil in a large cooking pan, add the chopped onion and fry until golden. Add the dices sausages and keep frying. Dice the parsley root, celery stalks, carrot and hot pepper and add the to the pan. Boil water.

Meanwhile, peel the potato and dice it and the bell pepper. Add them to the pan and stir well. Also add the spices and the rinsed barley, after mixing everything, add the boiling water. Bring the soup to boil, lower the heat and partially cover. Cook until the barley is done and the vegetables are tender but not over cooked. Serve hot!
