Heat the oven for a medium heat.
Take a piece of aluminum foil, twice the size of the baking dish. Put the chicken in the middle of it and fold the foil in two. Fold the edges, so you'll get a sealed envelope. Put it in the oven for an hour and a half.
When almost done, carefully open the envelope and put back in the oven, without covering. To get a better looking dish turn the heat to maximum and wait until it gets a nice color. Serve hot, with the gravy.
