Chop together rosemary leaves and garlic. Put them in a large bowl, add zest and juice from one orange, soy sauce, honey and chili flakes. Mix everything well until honey dissolves.
Wash the chicken pat it dry. Put the chicken parts in the bowl with the sauce and rub them well. Leave to marinate for at least an hour. Turn the oven to medium heat, cover the chicken with wet baking paper and bake for about an hour and a half, until meat separates from bones. If the sauce thickens too fast, add some water or orange juice and make sure the baking paper covers the dish. Serve hot!
